Good evening, everyone.

Lindsey is away all week so there's no live classes.  However, she has given us a whole load of pre-records so I will be doing some of them.


A delicious breakfast of cinnamon waffles with yogurt, blueberries and grapes.

Half a fibre, half a swip for a few sprays of avocado oil and half a swip for some kefir yogurt.

Leaves, tomato, cucumber, avocado, olives, coleslaw, black beans and an M&S pouch mix of bulgur wheat, chickpeas, red and wild rices with spices (2.5 swips for the whole pouch).

The avocado and olives together make one healthy oils choice so I will swip the breakfast oil.
One and a half swips for the grains, one swip for salad cream on the coleslaw and five swips for some creamy Caesar dressing (two tbsps)
So that's seven and a half swips.

It was both filling and delicious.  
 
You almost didn't get a dinner photo!  Forgive the messy, half eaten meal.
I mixed some cooked macaroni with a portion of the white bean cheese sauce, topped it with a mix of sourdough breadcrumbs and grated cheese and baked it in the air fryer.  Really nice with broccoli and sprouts.
The other half fibre and one calcium for the topping and three and a half swips for the sauce.

Summary:
Healthy extras:  one of each
Twelve swips.

But I will have gone over swips because I nibbled on some nuts.  Oh, well, at least it was a super-healthy going over.

Oooops, I forgot I am out for lunch today so it's all change!

I've looked at the menu and I really fancy the lasagne with a large salad instead of garlic bread.  I love their mixed grain salad but I've had that a couple of times and it's really not the weather for just a salad - it's raining again!

D:  Gressingham stir fry duck breast (found on the internet and I have duck breasts in the freezer)
I'll defer this until tomorrow or Tuesday and have something like toasted cheese or perhaps I wioll get out some chicken in stock and made a little casserole.
