I think, going forward, I may not be able to post every evening so it may be a post for more than one day sometimes.
Here's some of the meals I have had this week.
Avocado, melba toast and a salad
Fruit - the blueberries are from the garden.
A Slimming World Kitchen meal - one tray Mexican steak with beans
Omelette, grains and tomatoes
Half a four egg omelette filled with onion, pepper and mushrooms plus tomato on the side followed by a nectarine.
Two oil swips.
A portion of yesterday's Mexican steak and beans with creme fraiche, cheese and a simple salad. Very much nicer after a day of sitting in the fridge!
Two and a half swips for salad dressing, one and a half swips for lighter creme fraiche and one C healthy extra for the cheese.
Later on I had an apple.
In the evening, I made the ginger and pork stir fry.
It was nice and I bet it will be nicer when I have the second portion, The box provided white rice and I subbed half of my favourite pouch of Glorious Grains (Merchant Gourmet) instead. The rice can go in the Slimmer of the Week basket next week.

It made three portions (one now, one tomorrow and one in the freezer) so what I had was two and a half swips for the grains and two oil swips as I used a tbsp evoo in total.

D: the last SWK meal, jewelled chicken curry with broccoli and the rest of the grains.
And fruit
Regarding the healthy extras, C is calcium, F is fibre and O is oils and fats - easy! :-)
