Evening, everyone. Meals are getting back to normal, thankfully.
I bought some einkorn flour. Einkorn is a very ancient grain. Some of the properties of Einkorn flour separate it from modern wheat. The protein level in Einkorn flour is around 30% higher than modern wheat, there is close to 15% less starch, and you’ll find a higher concentration of minerals, dietary fibre and B vitamins. This makes Einkorn ancient wheat such a unique proposition for wholemeal baking.
Matthews Einkorn flour has a flavour that can be compared to modern wheat but with richer undertones of nut and a more toast-like essence. Einkorn is perfect for rustic bakes or comfort food like banana bread and pancakes.

A yummy brunch. I used my usual pancake/waffle sourdough batter recipe with einkorn flour rather than buckwheat and I have to say it was really tasty.
I just poured the lot into a smallish pan, put on the lid and let it cook over a lowish heat. When it was almost done, I popped it under the frill to finish the top.
The fruit is all from the freezer - apple, cherries and some of my garden blueberries.
Half a healthy extra fibre, a bit of a healthy fats choice (spray avo oil) and the rest is speed or free although I am counting one swip for sweetener.
For dinner, I warmed up the second third of the turkey, veg and linguini mixture, topped it with grated cheese and browned it off alongside the parsnip and carrot chips in the air fryer.
One calcium choice and a bit more healthy fats (spray avo oil for roasting).
Before Groove and first thing in the morning I had two apples, I had a pear in the afternoon and I had five swips worth of Green and Black dark (70%) chocolate. I read that it's much better than lower cocoa solids chocolate and a little bit satisfies - and it did. I wasn't the least bit craving any more, even though I really enjoyed nibbling it.

Two meals plus fruit seems to be suiting me so . . .
