Evening, everyone..
Are you having roast lamb this Easter - plenty of the shops seem to have 'less that half price' offers at the moment.  I certainly fell for it.
Alex and I won't be able to eat the lot on Sunday so I looked up some ideas to use leftovers and am sharing them with you.

There are repeats, of course, but plenty of tasty sounding ideas for you and me.

I had an easy peeler during the morning.

I had a friend round and forgot to take a photo of my portion so I took a photo of what was left after we had eaten our fill.
Moroccan chicken with roasted veg couscous - and it was delish.  I am so pleased I have one more portion with the rest of the chicken and one more portion to which I can add olives, feta, seeds, etc.  Both are in the freezer for now.

Afters was two small easy peelers.

Both the SW Kitchen meals I have had so far I  will be more than happy to make again using different vegetables - what I have in, in fact.   I love how adaptable they are.

Dinner was leftovers of the Singapore-style mushroom noodles, improved with some stir fried carrot and red/yellow peppers.  The flavour had developed and it was really nice.
The oil I used, plus the lunchtime oil pretty much came to my oils healthy extra for today.

Later on I had my cheese for my calcium.

Summary:
Healthy extras:  one calcium and one oil.  No fibre.
No swips.  Weigh in tomorrow is stopping me from going a bit bonkers with 300 calories worth of swips!!


Lunch:  someone told me about avocado pancake which is actually avocado omelette - two eggs and 40g mashed avocado.  Sounds good to me and I will cook some mushroom and tomato to go with it.  And lets fit the cheese into a meal.

D:  either steak and chips (a SWK meal) or a chicken curry (also a SWK meal).  I'm not sure which but whichever I choose will be my meal Saturday evening too.

And fruit as and when.
