It's been a tricky week for healthy eating, what with the heatwave and going out so often but this coming week should be a bit more steady and my posts more regular, fingers crossed

Air roasted potato and veg, corned beef and cheese, very simple and really tasty.
While bean and carrot falafels with a salad.
Essex Mess - cheaper and way more healthy than the original. Yogurt instead of cream and seeds instead of meringue and whatever fruit I have - in this one it is stewed rhubarb folded into the yogurt and blueberries scattered on top.
Today's plans are:
B: waffles, fruit and yogurt. I have sourdough starter to use so waffles will fit the bill.
L: marinated butterbeans with salad
D: I have beans left over so probably a bean and veg pasta thingy of some kind
