Recipe: carrot cake waffles (Slimming World friendly)

 


Ingredients to make one round of waffles:

EITHER:  20g sourdough starter and 10g flour (I use buckwheat but whatever you use, check it is a SW healthy extra) OR 20g flour
one egg
finely grated carrot - about two or three level tbsps but it's flexible
a dollop of Greek yogurt
half a tsp sweetener
half tsp baking powder
scant 1/4 tsp cinnamon, half that amount of nutmeg and ground allspice and a pinch of ground cloves

Bit of oil for spraying the waffle maker plates.  I use a basic electric one from Aldi.


Method:

Put everything but the oil in a bowl and mix into a smooth batter with a hand whisk.  If it seems too thick, add a splash of water (or milk, but swip it)
Set the waffle maker to heat up - the batter can rest while this is happening.
When the waffle plates are hot, spray or brush over with a little bit of oil.
Pour the batter into the machine, close, turn (or however your machine does it), and cook.

While the waffles are cooking, get the fruit and yogurt ready.

Optional:  I found that the cooked waffles were just a bit soft so I gave them three minutes in the air fryer to crisp them up a bit - or a toaster would probably do the same but be careful they don't burn.

Eat and enjoy.

Slimming world values:
Half a fibre healthy extra for the flour - sourdough starter is half flour, half water
The rest is all speed or free but if you use real sugar and milk, they will need swipping
