Recipe: cheesy avocado omelette wedges

 Ingredients for one (or two as a very light snack)

two eggs, beaten
60g mashed avocado (either frozen or fresh, it doesn't matter)
half tsp avocado topping or other seasoning
30g grated cheddar (or more!)
spray oil for frying

Method

Mix the egg, avocado and seasonings together well.
Heat some oil in a largish pan.
Pour in the egg mixture and when set underneath, loosen the underneath and flip over briefly
Flip back, sprinkle the grated cheese over half of the omelette and fold the other half over.
Remove from the pan and cut into wedges.

Serve with salad or roasted vegetables of choice.
