Recipe from the archives: chicken fajita loaded chips

A really old one, copied across direct from t'old blog as it doesn't need updating to swips or anything.  However, nowadays, I would use some sprays of proper, heart healthy oil (sesame, evoo, avocado . . .) and swip or healthy extra it.

Still no photos but I remember that it was really good so here you are.

First, get the chips started the SW way - par boil, spray and bake, turning half way through.


While they are doing you need onion, pepper and mushroom, all prepped and sliced, some fajita spice (I had some from the spice stall on the High Street), some chicken or turkey cut into strips, a squidge of garlic, some tomato puree and some grated cheese plus a dollop of yogurt.  Oh, and the ubiquitous spray oil without which Slimming World would curl up and die!

Spray a pan with oil, add the onion, pepper and mushroom and sizzle gently until starting to soften before adding the chicken or turkey (I used turkey breast as that's what I laid my hands on in the freezer).  Then add some garlic puree and some fajita spice, mix well and sizzle for a bit longer.
Finally add some tomato puree and some water, mix it all well and turn the heat down, leaving it to very gently sizzle, stirring now and again and adding a splash of water if it seems to be drying out.

When the chips are done, bring the meat/veg mix back to a boil (the sauce should be thick and spicy by now), get a bowl or plate, spread the chips around the outside and sprinkle over a bit of salt and the cheese.  Tip the spicy mixture in the middle, top with a dollop of yogurt and enjoy.

Very tasty and very satisfying.

Saturday, 07-02-26

Hi, everyone.

One pound off this week.  Not a huge loss but nice and steady and I am glad.

Apologies for Friday's non-appearance.  I wasn't feeling all that well and decided to take a day off from blogging.  Back now and feeling much better.

Here are Friday's photos.

Cheese and chutney toastie for lunch.
One fibre and two swips for the bread, one calcium for the cheese, part of a healthy fats for oil sprayed on the bread (making it all crunchy rather than just toasted)) and one and a half swips for the chutney.




I had a banana for breakfast - didn't fancy anything else.

Lunch was a very plain pasta meal.  Just vegetables with sourdough rye tagliatelle, mixed seeds and cheese.
A healthy fats choice for avocado oil and seeds and three swips for some Philly light.

Potato topped steak pie with vegetables.
Four swips (it said on the container label).

Back to proper normal tomorrow.

Evening, everyone.
Weigh in tomorrow and I have absolutely no idea, despite having stuck to the structure all week.  


Spiced apple waffles for breakfast.  I used my usual waffle recipe and added some mixed spice and some grated apple.
It was lovely and felt just a bit special (and the house smelled amazing for ages afterwards)!
Half a fibre choice and some of a healthy fats choice (chia seeds).

I had saved a blackbean and carrot burger recipe on my Kindle so I used that.  I think it was originally a BBC Good Food recipe but I can't find it online, sorry.  Bean burgers are very similar anyway, the biggest difference is in the spice/flavourings/seasonings details.
These were a quarter of the recipe and were delicious.
I used the other half fibre choice and the rest of my oils/fats choice plus one swip for a tbsp of Sauce Shop honey chipotle barbecue sauce.

Afters was some red grapes.  I love red grapes!

Dinner.
I used the last of the hm lasagne sheets (definitely making more), the last of the beany cheesy white sauce (ditto) and a portion of savoury mince, plus extra cheese, well worth paying swips for.
Four swips for the white sauce, one and a half swips for some much lighter salad cream and one calcium choice.
Another delicious meal - today has been good!
Afters was an apple.

Wednesday, 04-02-26

Good evening, everyone.


Breakfast:  yogurt, kefir and chia seeds topped with blackberries, blueberries, mango and pineapple. 
The kefir was half a swip and the chia seeds were part of my healthy fats.

It kept me full right up to lunch time although I made some spiced crispy chickpeas in the air fryer and they were so more-ish, I scoffed them all before lunch.  SW calls them a 'tweak' - I don't do tweaks and they were all SW free ingredients.

Lunch was a wrap cut in wedges and crisped in the air fryer (one fibre), the hummus was from the freezer (half a fats and one swip) and one swip for salad cream in the coleslaw.

Afters was an orange.

I made some sweet potato falafels for dinner.  They came out really soft but so nice.  There's three more portions of four in the freezer and what I had comes to around three swips for plain flour so I'm calling it four to be on the safe side.  A bit of oil was another two swips as I'd pretty much had my healthy fats.  Plus half a swip for couscous.

Evening, everyone.  
Hoping you have had a delicious day!  😋

Before Groove, I had a banana and afterwards an apple.

It was quite chilly this morning so a lovely, warming filled omelette for breakfast was very welcome.  Two medium eggs, some sliced mushroom, halved tomatoes and shredded turkey plus grated cheddar for my calcium choice.  Delicious and so very simple.

I was at Beth's for lunch and she had made a delicious vegetable soup.  Very enjoyable.

Later in the afternoon I had an apple and an orange

This is what dinner ended up as - salmon, roasted carrot and parsnip (using two swips worth of oil) and some packet couscous which was one and a half swips for the whole pack, of which I had a third.

And I had some cheese to nibble.

L:  some tortilla chips made with a wrap (cut into segments) and the air fryer, hm hummus, fingers salad.  Might make some crispy kale or roasted chick peas as part of the meal too

Monday, 02-02-26

Good evening, everyone.


This morning was quite busy so I had a banana (for energy) before circuits and an apple and two easy peelers between circuits and the next thing.  It worked!

This was the recipe I used for the smoky beans on toast.  I used spray oil, a bit of liquid smoke and it didn't need any sugar but the rest was pretty much as it said.  The butterbeans were a bit mushy because I over-slow-cooked the batch, but I was just careful when stirring them into the sauce.
Delicious, very easy and one to make again - you can use any pulses, it doesn't have to be butterbeans but I think butterbeans work really well.
I need to put some more in to soak now and this time I will try not to mush them
The really mushy bits went into Thermione with some frozen broccoli, cooked broccoli from yesterday, chicken stock and some soup base mix to make a waste-nothing soup.  I don't like frozen broccoli, it goes too soft and mushy.  Mash is good, mush is not!
One healthy calcium choice and the rest was free.

Meat feast tagliatelle.  I used ham, turkey and three rings of pepperoni, the usual veg, stirred in some philly light mixed in some sourdough tagliatelle (very nice).
Two swips for the pepperoni, two swips for the philly light and one calcium.

For afters, I had some rice pudding which was half a calcium and a further two swips for some agave nectar with cinnamon (Sweet Freedom)

Summary:

B:  omelette with turkey (using it up), mushrooms and cheese

L:  hm soup round at Beth's.  Yum!

D:  salmon, sweet potato roasties, veg or salad

Exercise is Groove class and, weather permitting, the walk there and back.  As I type, the forecast is not great though.

Sunday, 01-02-26

 Evening, everyone.  


Pancakes for breakfast!  I decided to spend some swips on some maple syrup which is so lovely with banana and blueberry.
Unfortunately, I got the mixture too watery so they were a bit floppy,  but still nice.
Two swips for a tbsp.
Some soup for lunch with a cheese and apple roll and I finished off the apple for afters.
One calcium, one fibre and four and a half swips.

I had another nibble of cheese and bread so I'm saying another calcium and three swips for a bit of bread.

I had a small chunk of ham from one of those packs of bacon bits so I baked that in the air fryer and sliced it to have with roasted veg and some green stuff.
SW free and lovely.

B:  I probably won't have time for much breakfast between circuits and something I am going afterwards so I'll grab an apple, etc.
