Tuesday, 17-02-26

Evening, everyone. 

I had a banana before Groove - for energy!

Pancake day breakfast.  I found a recipe that uses sourdough starter and reduced it down to a sensible amount (one egg, etc).  The first one was, like all first pancakes, a right mess but the others were delicious and it's now on my 'repertoire' as an alternative to my thicker pancakes.

Three swips for the flour and half a swip for the very small amount of milk plus one swip for spray oil.
(I need the calcium and fibre for lunch and dinner)


Now and again, I make something that tastes so much better than expected and this was one of them.

I took a warmed up portion of yesterday's fancy jazzed up beans (see yesterday for details) and to it added some cooked chopped bacon and a bit of the rice, grains and beans pouch from whenever it was.

I whisked up one egg and poured it into the pan, immediately followed by a wrap, lifting it out when the omelette was cooked (it stuck nicely to the wrap).
On the egg side I spread a bit of BBQ sauce, then the beany mixture and finally some grated cheese, folded it over and served it with tomatoes and hm coleslaw.
So . . . one fibre and one calcium, one swip for the sauce, half a swip for  a bit of the grains, rice and beans and one swip for salad cream in the coleslaw.
And a very happy and satisfied me!
Afters was the rest of the apple that I didn't add to the coleslaw.

Another tasty one for dinner.  hm lasagne (all but the cheese!!) with roasted parsnips on the side.
A healthy calcium plus three and a half swips (I had extra cheese.
For afters, I had an orange and an easy peeler which needed using up.

Summary:
Healthy extras:  two calcium choices and one fibre
Ten and a half swips


B:  the last of the spicy beans, bacon, egg and mushrooms

L:  mushroom burger with salad and coleslaw

D:  either I will make some ravioli or I will use the SW ready meal of mozzarella and tomato ravioli from my freezer and I will make a nice sauce to have with it plus some green veg because I haven't had many green veggies recently.

Monday, 16-02-26

Evening, everyone.  Proper back on it today.


Delicious breakfast of cinnamon pancakes, defrosted fruit and yogurt.
Four swips for the pancakes.


Jazzed up baked beans (baked beans from a can with chopped kimchi, miso paste, Hendersons, tomato puree and added kidney beans.
I spread the toast with Marmite and cooked a couple of the SW sausages.  They're not great but I'm not wasting them.

One fibre and there's so little kimchi per portion that it doesn't need to be swipped.

Later on I had an apple and an orange.

Dinner was delicious.

pretty much straight although I had yellow pepper, not red and had no fish sauce so added Hendersons and lime juice.  Oh - and no basil and spring onions.  The method was the same.
One healthy oils for oil, one swip for oyster sauce and I think that's it.

I swill definitely have this again - I have three more duck breasts in the freezer - and use a wider mix of stir fry vegetables.  Also I would like to have a go at making noodles.

A bit later, I had some cheese for one calcium and three swips.

B:  it's pancake day so, of course, crepes with lemon and sweetener!

L:  I have baked beans to use up so I think I will make a wrap omelette

Sunday, 15-02-26

Good evening.  

Nothing to show for today.
Breakfast was an apple.

I was out with friends for lunch .  I had hoped to have lasagne but that wasn't on the Sunday menu so I went for the mixed grains salad with chicken sand had a mini Eton mess for dessert - not remotely SW friendly!

Dinner was bits and bobs, naughty stuff.
No photos.

So - proper back on it tomorrow!

Good evening, everyone.

Lindsey is away all week so there's no live classes.  However, she has given us a whole load of pre-records so I will be doing some of them.


A delicious breakfast of cinnamon waffles with yogurt, blueberries and grapes.

Half a fibre, half a swip for a few sprays of avocado oil and half a swip for some kefir yogurt.

Leaves, tomato, cucumber, avocado, olives, coleslaw, black beans and an M&S pouch mix of bulgur wheat, chickpeas, red and wild rices with spices (2.5 swips for the whole pouch).

The avocado and olives together make one healthy oils choice so I will swip the breakfast oil.
One and a half swips for the grains, one swip for salad cream on the coleslaw and five swips for some creamy Caesar dressing (two tbsps)
So that's seven and a half swips.

It was both filling and delicious.  
 
You almost didn't get a dinner photo!  Forgive the messy, half eaten meal.
I mixed some cooked macaroni with a portion of the white bean cheese sauce, topped it with a mix of sourdough breadcrumbs and grated cheese and baked it in the air fryer.  Really nice with broccoli and sprouts.
The other half fibre and one calcium for the topping and three and a half swips for the sauce.

Summary:
Healthy extras:  one of each
Twelve swips.

But I will have gone over swips because I nibbled on some nuts.  Oh, well, at least it was a super-healthy going over.

Oooops, I forgot I am out for lunch today so it's all change!

I've looked at the menu and I really fancy the lasagne with a large salad instead of garlic bread.  I love their mixed grain salad but I've had that a couple of times and it's really not the weather for just a salad - it's raining again!

D:  Gressingham stir fry duck breast (found on the internet and I have duck breasts in the freezer)
I'll defer this until tomorrow or Tuesday and have something like toasted cheese or perhaps I wioll get out some chicken in stock and made a little casserole.

Morning, everyone.  


Breakfast - some roasted veg topped with an egg and it was great - tasty and filling.
Part of a healthy fats choice.

I wasn't hungry come lunch time so I just had some fruit.
A sort of fakeaway for dinner and very delicious it was too.
The rest of my healthy oils, one fibre and one calcium, one and a half swips for chutney and one swip for salad cream.  Filling!

Evening, everyone! 




A nice selection of fruit for breakfast.
Inside the wrap was some falafel, roasted sweet potato,  cheese and bbq sauce.  Lovely.

One calcium, one fibre, most of a healthy fats and four swips.

No photo of dinner - I had bits and bobs because I was feeling very weary and couldn't be bothered.

It's not been the best week and I probably won't weigh tomorrow.
