Tuesday, 14-04-26

Good evening, everyone.  I hope the day's been good for you.

I had a banana before Groove and an apple afterwards
I enjoyed this.  A pre-cooked and frozen jacket potato, reheated, with salad cream because you HAVE to have salad cream with potato and cheese,  two healthy extras-worth of grated cheddar and some chopped bacon with  tomatoes on the side.
Afters was grapes

Two calcium healthy extras.

Later on, I had an orange.

A very tasty dinner of the rest of the Thai green chicken curry with noodles and dahl.

The curry was seven swips (counting the curry paste and the coconut milk) plus a bit of a healthy oils choice.  The dahl was free and speed.

Summary:
Healthy extras:  two calcium choices and that's it.
Seven swips

L:  carrot and cumin burger with a mixed salad and coleslaw.

D:  loaded fajita chicken fries, salad

and fruit

Exercise:  Groove online.  No PT this week

Recipe: carrot cake waffles (Slimming World friendly)

Ingredients to make one round of waffles:

EITHER:  20g sourdough starter and 10g flour (I use buckwheat but whatever you use, check it is a SW healthy extra) OR 20g flour
one egg
finely grated carrot - about two or three level tbsps but it's flexible
a dollop of Greek yogurt
half a tsp sweetener
half tsp baking powder
scant 1/4 tsp cinnamon, half that amount of nutmeg and ground allspice and a pinch of ground cloves

Bit of oil for spraying the waffle maker plates.  I use a basic electric one from Aldi.

Method:

Put everything but the oil in a bowl and mix into a smooth batter with a hand whisk.  If it seems too thick, add a splash of water (or milk, but swip it)
Set the waffle maker to heat up - the batter can rest while this is happening.
When the waffle plates are hot, spray or brush over with a little bit of oil.
Pour the batter into the machine, close, turn (or however your machine does it), and cook.

While the waffles are cooking, get the fruit and yogurt ready.

Optional:  I found that the cooked waffles were just a bit soft so I gave them three minutes in the air fryer to crisp them up a bit - or a toaster would probably do the same but be careful they don't burn.

Eat and enjoy.

Slimming world values:
Half a fibre healthy extra for the flour - sourdough starter is half flour, half water
The rest is all speed or free but if you use real sugar and milk, they will need swipping

Good evening, everyone.  Have you had a good day?

Before circuits I had a banana and after circuits an apple
Very yummy carrot cake waffles with yogurt and fruit.
Half a fibre choice.

In the afternoon, I had an orange and some easy peelers.
This was lovely - Thai green chicken curry with noodles.
Afters was an apple and a bit later I had a good nibble of cheese.

Seven swips for the curry (for half - I have the other half for tomorrow) plus half a healthy oil  choice for sesame oil.  The cheese was two calcium choices.

Summary:
Healthy extras:  two calcium choices, half a fibre and half a healthy oil.
Seven swips

L:  jacket potato with cheese and bacon topping, side salaD.

D:  the other half of the Thai green chicken curry
(I might have them the other way round)

And fruit

Exercise:  Groove and the walk there and back.

Recipe: cheesy avocado omelette wedges

Ingredients for one (or two as a very light snack)

two eggs, beaten
60g mashed avocado (either frozen or fresh, it doesn't matter)
half tsp avocado topping or other seasoning
30g grated cheddar (or more!)
spray oil for frying

Method

Mix the egg, avocado and seasonings together well.
Heat some oil in a largish pan.
Pour in the egg mixture and when set underneath, loosen the underneath and flip over briefly
Flip back, sprinkle the grated cheese over half of the omelette and fold the other half over.
Remove from the pan and cut into wedges.

Serve with salad or roasted vegetables of choice.

Sunday, 12-04-26

Good evening - have you had a lovely day?

It was a bit of a fruity morning as I discovered five very small pears that had all suddenly turned ripe at the very same time.  They are no more now!
Swip free, of course!

I really do love avocado pancake.  Two eggs, beaten, add around 60g mashed avocado and some seasoning (I used Just Spices avo topping) and cook as for any pancake.  When done, add 30f finely grated cheese on one half and fold the other half over.
I cut it into three wedges and used my fingers!!

One swip for salad cream and half for dressing.
Delicious with salad and coleslaw.
One calcium choice and, with the bit of oil I used for dinner, one healthy fats/oils choice.

Later on, I had an apple and an orange.

Dinner was so good.  What a plateful of veggies.

I heated the steak in a gravy I made like this.
I heated some water, white miso paste and vegetable bouillon in a pan and, when it was boiling, I thickened it with some Oxo garden vegetable stock powder and then stirred in a bit of marmite for ooomph.

The gravy was swip free (I checked), the little bit of oil for roasting the parsnips was part of a healthy extra and the horseradish sauce was one and a half swips.

Summary:
Healthy extras - one calcium and one oils/fats.  No fibre
Three swips
L:  I want to have a go at making carrot cake waffles or pancakes.  It's an eggless, WW2 recipe but I will use my usual recipe plus grated carrot and the right flavourings I need to look up carrot cake flavourings; it's not something I have made for decades.

D:  Thai green chicken curry with buckwheat noodles

And fruit

Exercise:  circuits

Saturday, 11-04-26

Good evening, everyone.

I was out for lunch and had a Caesar salad.  It was lovely but I have no idea of swips, etc.  However, that's all I had with some sparkling water; I didn't want dessert.

The photo is dinner - yesterday's recipe but with pasta rather than chips.  The purple pasta make it look very murky but it's actually quite delicious and I enjoyed this meal.
Afters was an apple and some melon.

One healthy fats choice.

Summary:
Healthy extras:  one fat and no calcium or fibre
Swips unknown

L:  something to do with avocado as I have some ripe ones.  Maybe avocado toast with a salad - that would be nice.

D:  Sunday roast using the last of the steak and a selection of vegetables

And fruit

Friday, 10-4-26

Good evening, everyone.  I hope you've had a great day.

Well, I may have had a maintain at group this morning (bit disappointing but it is what it is) but I won the raffle, coming home with apples, onions, potatoes and spring onions.

A bacon and egg bun for lunch - very tasty!
One healthy fibre, some of a healthy oil and one swip for some sauce.
Afters was some grapes and later on I had an apple.
The lazy SWK meal and it was mega!  They provided SO MUCH steak that I ate a third (and couldn't manage all of it) and used half or less than half amounts for what's on the plate.  I'm using the rest tomorrow, see below.
More grapes for afters.
The rest of my healthy oil and swip free.

Summary:
Healthy extras:  one fibre and one oil
One swip

L:  I'm having lunch out with my SW golden oldies friends - no walk beforehand!  We're going to The Chequers, a community pub in the village where I lived for a couple of years around 40 years ago now.  If you're interested, this is the pub's recent history.

D:  OK, so I have loads of things left over from the steak and chips so I will make the sauce as per the recipe, cook the tomatoes, etc, but I will add tomatoes to the sauce and I will also add some of the cooked and sliced steak too and mix it with cooked pasta.
The rest of the steak can be my meat component of a 'roast' dinner on Sunday.  Waste not, want not!

And fruit!

Monday, 28-09-26

Good evening, all.   No breakfast - I wasn't hungry! I met Alex in town and we ended up going to Zizzi where I had a chicken Caesar sala...
